NO-COCOA SNACK BALLS
I made a couple new batches of snack balls yesterday, leaving out what I thought was a key ingredient – cocoa powder. I though it would be interesting to see if I could make tasty snacks without it for a change. So far, the consensus is that these are some of the best yet!
Here are the two recipes, one made with a mixed protein powder, and one made with chocolate-flavored whey protein (with stevia, not aspartame) and tamarind (a key ingredient). The process for making snack balls: Grind nuts with dried fruit and powdered ingredients (don’t forget spices) in food processor. Add liquid ingredients at the end (coconut cream, tamarind, water). Adjust the amount of oil or water as needed to get a consistency that can be rolled into balls. Of course, you can substitute other types of nuts, dried fruit, and protein powders according to your preference.
BATCH 1 (lighter-colored balls in picture above):
- 1 cup Brazil nuts
- 1 cup walnut pieces
- 1/2 cup pepitas (pumpkin seeds)
- 9 dried apricots
- 9 dried figs
- 2 oz (56 g) 72% dark chocolate
- 1 cup super high protein powder (see picture below)
- 1/4 cup hemp protein
- 1/2 cup dried coconut flakes (unsweetened)
- salt, cinnamon, and cayenne pepper to taste
- ~4.7 oz (133 g) coconut cream
- 1/2 cup hot water
BATCH 2 (darker-colored balls):
- 1 cup pepitas
- 1/2 cup walnut pieces
- 1/2 cup Brazil nuts
- 1/2 cup almonds
- 9 dried apricots
- 6 figs
- 2 oz (56 g) 72% dark chocolate
- 1 cup chocolate whey protein powder
- 1/4 cup hemp protein
- 1/2 cup dried coconut flakes (unsweetened)
- salt, cinnamon, and cayenne pepper to taste
- ~4.7 oz (133 g) coconut cream
- 1/2 cup hot water
- 1/4 cup tamarind concentrate (see picture below, available at Indian and Asian groceries)
