Super tasty snack squares

I have a great new recipe to share – a twist on the old snack balls that is super easy to make and has been getting rave reviews. These snacks leave out the protein powders and have a nice crunchy texture. I’ve made two basic variations – one with peanut butter and one without peanut butter and with coconut cream. Here’s what you need:

  • 3 cups nuts (I use a mixture of walnuts, pecans & pepitas)
  • 1/2 cup sunflower seeds
  • 1/4 cup sesame seeds
  • 1/4 cup chia seeds
  • 6–8 dried figs, apricots, dates or other fruit
  • 1.5 oz dark chocolate chips or chunks
  • 1/2–1 cup coconut flakes
  • cinnamon, cayenne pepper, chipotle powder, salt
  • 1/4–1/3 cup brown rice syrup or honey
  • 1/2 cup peanut butter or 1/4 cup coconut oil

Mix the nuts, dried fruit and spices in a food processor. I like it to be crunchy so I don’t pulverize it too fine. Then add the rice syrup or honey, peanut butter or coconut oil (you could probably use both if you like). Add more dates, peanut butter or coconut cream if needed to get it to a consistency that sticks together. Then press it all in a pan and refrigerate it for a couple hours until you can cut it into bars. Store in the fridge. The crumbly leftovers make great toppings for yogurt and are good just to eat with a spoon.
